Se Busca ("Wanted") positions itself as an entry point into traditional Oaxacan mezcal craft without sacrificing the production methods that define the category. Oaxaca's Central Valleys — the spiritual heartland of mezcal — deliver agave grown in rocky, mineral-rich soils at elevations between 1,400 and 1,700 metres, where the diurnal temperature swing concentrates sugars and intensifies the piña's aromatic complexity. The agave hearts (piñas) are roasted in underground earthen pit ovens lined with volcanic rock, the defining step that imprints the characteristic smoke and char onto the spirit. Following roasting, the mashed agave is open-air fermented with ambient wild yeasts in wooden vats, then double-distilled in copper pot stills — the traditional Oaxacan alembic method. As a joven (unaged) expression, no wood contact intervenes between distillation and bottle, preserving the raw, unmediated character of the roasted agave and the fermentation's earthy funk. What sets Se Busca apart within the entry-level mezcal tier is its deliberate commitment to pit-roasting and copper distillation at a price point where shortcuts are common.
