400 Conejos takes its name from Aztec mythology, where 400 rabbit gods presided over pulque and intoxication — a deliberate nod to Mesoamerica's deep agave-fermentation lineage that predates distillation by centuries. The brand sources agave from the Central Valleys of Oaxaca, a high-altitude plateau where thin, rocky soils and dramatic diurnal temperature swings concentrate sugars and stress the plant into producing more complex piña tissue.

Production follows the traditional Oaxacan method: agave hearts are pit-roasted in earthen ovens lined with volcanic rock and fueled with mesquite wood, the step that defines the smoke signature. Crushed by tahona or mechanical mill, the mash ferments in open wooden vats with ambient wild yeasts before double distillation in copper pot stills. As a joven, it receives no oak aging, preserving the raw roasted-agave and smoke character in full.
