Ocho was founded in 2008 as a deliberate argument that tequila could carry vintage and terroir declarations the way Burgundy does — each release locked to a single rancho and a single harvest year, printed on the label. The Reposado expression rests on that same philosophy: the oak regime is kept short enough that the agave speaks louder than the wood.
Los Altos de Jalisco sits at 1,500–2,000 m elevation on iron-rich red clay soils (locally called tierra roja), where cooler nights slow agave maturation over 8–12 years, concentrating sugars and producing a characteristically sweeter, more mineral-driven piña than lowland Tequila Valley fruit.
Production follows traditional Highlands practice: brick oven (horno) cooking of the piñas, roller-mill extraction, open-tank fermentation with native airborne yeasts, and double distillation in copper pot stills. The Reposado then ages for exactly eight weeks in ex-American whiskey barrels — a deliberately minimal window chosen to add texture without masking the rancho-specific agave character.
What separates Ocho from virtually every other tequila brand is the vintage-and-rancho declaration: each batch is traceable to a named field, making horizontal comparison across releases a documented exercise in terroir difference. The result is a Reposado that reads closer to a rested Blanco than a wood-forward spirit — cooked agave, citrus pith, and red-clay minerality dominate, with barrel influence arriving as a secondary frame.
