Rooster Rojo sources its blue Weber agave from the Los Altos de Jalisco highlands — the red clay-rich, iron-laden soils sitting at elevations above 2,000 metres that produce agave with notably higher sugar concentration and a more pronounced herbal, citrus-forward profile than lowland Tumbas valley fruit. The cooler nights and intense daytime sun of Los Altos slow agave maturation, typically extending growth cycles and intensifying flavour compounds in the piña.
After harvest, the piñas are slow-roasted in traditional brick ovens, then fermented and double-distilled in copper pot stills — a deliberate choice to retain more congeners and agave character than column distillation alone would allow. The spirit then rests for a minimum of two months in American oak ex-bourbon barrels, the used-cask regime preserving agave expressiveness while contributing vanilla, light caramel, and toasted wood without overwhelming the highland terroir signature.
