Arandas, Jalisco's highland terroir — elevation ~1,500m, volcanic-mineral soil — produces agave with natural sweetness and crisp acidity. Olmeca Altos sources from this subregion, where cooler nights extend maturation cycles and concentrate sugars.
Production: 100% blue agave harvested at peak ripeness, cooked in brick ovens, fermented in stainless steel, then aged minimum 2 months in ex-bourbon casks. The reposado classification demands oak contact but stops short of the deeper oxidation of añejo, preserving the agave's mineral backbone while introducing vanilla and caramel notes from the wood.
Special character: Reposado sits at the inflection point — agave intensity remains pronounced, but oak softens the spirit's edges without overwhelming its terroir signature. The ex-bourbon cask regime (rather than new oak) allows the agave to lead.
Bottled at 40% ABV. Drink within 3–5 years of release for optimal balance between oak integration and agave freshness.
