Mayalen Wild Tobala sources tobala agave from the Sierra Madre del Sur mountains of Oaxaca, a region defined by steep volcanic slopes and thin, mineral-rich soils at elevation. Tobala is a wild, slow-maturing agave species—smaller and more delicate than cultivated blue agave—prized for its aromatic complexity and rarity.
Production follows traditional mezcal protocol: plants are harvested and roasted in earthen pit kilns, imparting deep smoke character through direct wood combustion. The roasted hearts are then copper-pot distilled, a method that concentrates volatile aromatics while preserving the agave's mineral and herbal signatures. This expression is unaged (blanco), bottled immediately post-distillation to capture the raw intensity of the tobala varietal and roasting process.
The special distinction here is tobala itself—a wild, foraged agave that yields only small quantities per plant and commands premium pricing. Its flavor profile diverges sharply from mezcal's more common agave varieties (espadin, cuishe), offering brighter herbal and citrus notes alongside the expected smoke.
