Enrique Fonseca distilled this lot in September 1995, then made a deliberate mid-life decision in 2001 to re-blend and re-barrel the spirit — a move borrowed from his apprenticeships with Scottish and Cognac producers — transferring it into 47% Canadian white oak ex-rye whiskey casks and 53% European dark oak ex-California red wine barrels before relocating the entire parcel to the cool, subterranean barrel room at El Chapingo, Jalisco (~5,400 ft) for a final 12-year phase. The highland agave originates from hillside plots in Atotonilco El Alto, Los Altos, at 4,600–5,500 ft, where volcanic-influenced soils and diurnal temperature swings push piña sugars to 24–26 °Brix at harvest — a concentration that survives 18 years of maturation as a structural backbone. The distillate is a deliberate blend: 75% copper double-column still / 25% copper alembic pot still, calibrated to marry length and agave intensity. Fermentation runs in open-air stainless steel tanks with a proprietary yeast strain; no diffuser, no additives (Tequila Matchmaker verified). What no peer in the category does: Fonseca physically relocates barrels between two facilities at different elevations mid-maturation to modulate extraction rate — a practice without parallel in tequila. The 18-year drinks with the structural density of a long-aged Armagnac but retains unmistakable cooked-agave identity; drink now through the next decade.
