After traditional brick oven roasting of the piñas and fermentation with cultivated yeast, the blanco distillate is aged for a minimum of 12 months in a combination of American and French oak barrels — a dual-cask approach that pulls vanilla and coconut from the American wood while French oak contributes dried fruit and subtle spice. The spirit is bottled at 40% ABV without chill-filtration, preserving the natural oils that give it textural weight.
