When Orazio Nonino founded the Percoto distillery in 1897, grappa was peasant fuel. It was his granddaughter-in-law Giannola who, in 1973, separated individual grape pomaces by variety and distilled each alone — an act that effectively created a new legal spirit category and forced Italian law to follow. The AnticaCuvée® Riserva is the house's most complex multi-wood aged expression, drawing on that same philosophy of radical specificity. Distillation takes place in 66 handcrafted copper steam discontinuous stills at the Percoto site, using only fresh pomace delivered and fermented within hours of pressing — never frozen, never silo-stored — with residual wine-fermentation yeast completing sugar conversion in approximately five days. Aging spans 5 to 20 years across a rotating portfolio of small casks: Nevers, Limousin, and Grésigne oak, ex-Sherry casks from Jerez de la Frontera, ex-Sauternes barriques, Acacia, wild Cherry, Ash, and Pear wood, housed across seven warehouses holding 2,620 barriques. Zero color additives are used across the entire Nonino range — the amber depth here is earned entirely from wood. What no peer does: the simultaneous use of fruit-wood casks (Cherry, Pear, Ash) alongside classic Limousin and Sherry wood in a single aged grappa cuvée, producing layered oxidative complexity unavailable from any single-cask regime. As a non-vintage blend, the AnticaCuvée® is built for consistency and immediate drinking, though its extended wood contact rewards another decade in bottle.
