Malfy was founded in 2016 at the Torino Distillati facility in Moncalieri, Piedmont, built on the deliberate premise that Italian coastal botanicals — not London's juniper orthodoxy — should anchor a gin's identity. The Rosa expression takes that philosophy furthest by centering sun-dried Sicilian pink grapefruit peel as its lead botanical, sourced from groves on the island's southern slopes where intense UV and volcanic soil concentrate bitter glycosides in the rind.
Production follows a cold maceration of the grapefruit peel and Rosa Mosqueta (rosehip) in neutral grain spirit before a copper-pot distillation run that preserves the volatile citrus oils without cooking them into marmalade. The resulting distillate is cut with Italian coastal water to bottling strength of 41% ABV. Juniper, coriander, angelica root, and cassia complete the botanical bill but are deliberately subordinated to the citrus-rosehip axis — an inversion of the classic London Dry hierarchy.
What separates Rosa from the crowded pink-gin category is the use of actual dried fruit peel maceration rather than post-distillation colorants or flavoring; the blush hue is entirely botanical in origin. The result is a gin with genuine bitter-citrus grip rather than confectionery sweetness.
