Jean-Baptiste Camus founded the house in 1863, and five generations later it remains family-owned — an independence that allowed Cyril Camus to patent the Instensity distillation method in 2003, a technique no other major Cognac house employs. During the second distillation (bonne chauffe), twenty one-litre samples are drawn from the heads fraction; the single litre carrying the highest ester concentration is identified and reintegrated into the hearts, producing an eau-de-vie of measurably greater aromatic density than terroir alone would yield.
The fruit comes from 188 hectares in the Borderies cru — the smallest of Cognac's six growing zones — centred on Château du Plessis. Borderies soil is clay-limestone studded with silex (flint), a combination that drives the cru's signature violet-floral lift and textural roundness, markedly different from the leaner, more austere profile of Grande Champagne peers. Fermentation runs approximately six days at 21–26°C using house-selected yeast strains, and distillation is conducted sur lies to build ester complexity and body. Aging proceeds in 350 L Limousin oak casks with very light toast, predominantly previously used, a deliberate choice to keep delicate Borderies florals in the foreground rather than ceding them to wood. No boisé; no added sugar. The VSOP's drinking window is open now and will remain so for several years of home cellaring.
