When Pierre Vaudon took over the cellars at Le Maine Verret in 2017, he inherited an unbroken paradis reserve stretching back to the 1870s — and a commitment to distilling sur lies (on the lees), a practice that the major négociant houses have largely discarded for efficiency. That choice defines the VSOP: the lees remain in contact through double distillation in traditional Charentaise copper alembics, contributing a textural richness and aromatic density that clean-distilled cognacs at this tier rarely achieve.
The 28-hectare estate in Verrières and Ambleville sits on Campanian chalk — the deep, porous geology that drains excess moisture, stresses the Ugni Blanc vines, and concentrates the eaux-de-vie's capacity for long aging. Inter-row wild meadow cover amplifies that stress deliberately.
Distillation cuts are made by nose rather than instrument. The spirit enters virgin Limousin oak for approximately three years, then transfers to refill casks from Limousin, Bercée, Gâvre, and Reno Valdieu forests. Damp and dry cellars are used in combination to modulate aromatic development. The VSOP holds 7–14 years — well beyond the legal four-year minimum.
Unusually for a VSOP, the age range overlaps with many houses' Napoléon tier, delivering rancio development that most peers reserve for older classifications. The result is a spice-forward, chalk-driven cognac that expresses the terroir of a single cru with no blending outside Grande Champagne.
