When Thomas Hine arrived in Jarnac from Dorset in 1791 and married into the founding négociant family, he brought an Englishman's palate to Cognac — a bias toward delicacy over power that still defines the house's philosophy: great Cognac is, above all, a great white wine. Rare VSOP is a Fine Champagne blend, drawing eaux-de-vie aged 6–12 years from both Grande Champagne and Petite Champagne crus — the chalky-limestone valleys that deliver the region's signature long maceration of CO₂ into the base wine and the slow, penetrating oxidation that builds complexity without weight. Distillation is conducted sur lies in traditional Charentais copper alembic pot stills — a deliberate house signature that introduces pastry roundness and textural density uncommon in VSOP-tier Cognac. Aging begins in new or lightly toasted fine-grained French oak, then transitions to seasoned refill casks to moderate tannin extraction, with the Jarnac cellars' humidity cycling between 70–90% and temperatures from 6.5°C to 20.5°C driving a measured angels' share of 2–3% annually. What separates Hine from virtually every peer at this price tier is the lees-distillation protocol — a technique more associated with prestige cuvée Armagnac than commercial VSOP Cognac — producing a mid-palate density that reads richer than the age statement suggests. Bottled at 40% ABV with dilution introduced gradually over years to integrate the blend without shock.
