That territorial commitment is the technical foundation of 1738 Accord Royal: every eau-de-vie in the blend originates exclusively from the two highest-ranked Cognac crus, a restriction most rivals reserve only for prestige cuvées. The deep chalky-calcareous subsoil of Fine Champagne retains moisture through dry seasons, preserving grape acidity and concentrating aromatic compounds in the Ugni Blanc that forms roughly 97% of the base wine. Rémy Martin's defining production signature is distillation on the lees — the residual yeast sediment is left in the still rather than racked off, a deliberate choice that builds aromatic density most peers cannot replicate. Double distillation runs through traditional alembic charentais copper pot stills, each cycle taking approximately 24 hours. Maturation proceeds in French Limousin oak from trees at least 100 years old, wood seasoned outdoors for 2–3 years; the large open grain drives pronounced vanilla and spice exchange.
