When Cono Sur adopted screwcaps for aromatic whites in 2002, it was the first Chilean winery to do so — a deliberate rejection of cork convention driven by the conviction that freshness, not tradition, was the correct closure philosophy for high-acid whites. The Bicicleta Sauvignon Blanc sits within that same logic: a wine built around preservation of primary aromatics above all else. Sourced from cool-climate coastal sites across Cono Sur's multi-valley network — including Campo Lindo and El Centinela, where Humboldt Current breezes and foggy mornings slow ripening on granitic and sandy soils — the fruit arrives with natural tension and green-herb precision that warmer inland blocks cannot replicate. Vinification is entirely in temperature-controlled stainless steel, with no oak contact, preserving the site-driven citrus and herbaceous character without textural interference. No malolactic conversion is indicated, keeping acidity structural and linear. The special feature here is scale without compromise: Cono Sur's 314 hectares of certified organic vineyards and drip-irrigation discipline underpin even the entry tier, meaning the Bicicleta benefits from the same agronomic rigour applied to the house's icon wines. Drink young, within 1–2 years of vintage, for maximum aromatic lift.
