“The sky originates, the earth nourishes and refines the man” – Bernard de Clairvaux – This phrase is at the base of the biodynamic philosophy of David Léclapart. Biodynamics is the only type of agricultural crop that, with the help of the farmer, combining the forces of heaven and earth. The vineyard’s soil is covered with different species of grass to replenish a graded structure that creates a new living space. The principles that govern his work in the cellar are identical to those in the vineyard: accuracy, respect for life and its rhythms, search for purity. For this the use of the barrel is primordial.
