Founded in 1894 by Arthur Agrapart — decades before the modern grower-Champagne movement existed — this Avize domaine has always bottled under its own label, a quiet act of defiance that shaped how the Côte des Blancs is understood today. Minéral draws exclusively from two pure belemnite-chalk parcels: Les Champboutons in Avize and Les Bionnes in Cramant, both Grand Cru, on east-facing slopes where the chalk subsoil drains freely and retains heat, driving the wine's signature saline tension over any sense of richness. Vinification is entirely in old 600 L oak demi-muids with indigenous yeasts, full malolactic fermentation, and no chaptalization; the wine then ages a minimum of 6 years on lees in chalk cellars at constant 10 °C before disgorgement. Bottled unfined and unfiltered at Extra Brut, 3 g/L dosage — low enough to leave chalk-driven texture fully exposed. What separates Minéral from every neighbouring Grand Cru Blanc de Blancs is the deliberate choice to isolate pure-chalk geology from the clay-over-limestone parcels just 600 metres away, making geological contrast, not blending, the winemaking argument. The 2013 vintage, a cool year demanding precision over generosity, rewards patience: the wine is in its drinking window now but structured for another decade of development.
