When Chef de Cave Benoît Gouez — in post since 2005 — confronted the extreme drought of 2015, he leaned into the vintage's intensity rather than correcting it: the result is an Extra Brut at just 5 g/L dosage, the lowest sugar level in the Grand Vintage range, letting the year's concentrated fruit carry the wine unmasked. The fruit draws from Moët's ~1,190-hectare estate across Champagne's five sub-regions — Montagne de Reims, Vallée de la Marne, Côte des Blancs, Sézanne, and the Aube — all rooted in chalky limestone soils whose water-retention properties were critical in a year when drought stress compressed berry size and amplified phenolic concentration. The assemblage locks in Pinot Noir at 44%, Chardonnay 32%, Pinot Meunier 24%, fermented in thermoregulated stainless steel with systematic malolactic fermentation, then aged a minimum of 6–7 years on lees in Moët's 28 km of chalk cellars beneath Épernay — the most extensive in the region — before disgorgement. What distinguishes this expression within the Grand Vintage lineage is the drought-driven structural tension: the low dosage exposes a nervy, almost austere spine of acidity beneath almond, brioche, and white peach, a profile closer to Blanc de Blancs austerity than the house's characteristically seductive fruit-forward register. Wine Spectator 94, Vinous 93; at peak now, can hold to 2030.
