When Jérôme Coessens established his label in 2006, he made a single defining decision: every bottle would come from one lieu-dit, one grape, one vintage — a Burgundian discipline almost without precedent in Champagne. The Blanc de Noirs draws specifically from the Fruit and Flower sub-parcels of the 3.36-hectare Largillier monopole in Ville-sur-Arce, Côte des Bar.

Largillier sits on Kimmeridgian Marl No. 2 — alternating clay and chalk/limestone strata confirmed by 2011 excavations to be geologically identical to Chablis Grand Cru. The clay fraction builds uncommon body and grip for a Blanc de Noirs; the chalk drives a mineral persistence that outlasts most Marne-valley counterparts.

Base wines are fermented in stainless steel, preserving the raw terroir signal without oak interference. Dosage is set at ~6 g/L Brut, calibrated to frame the clay-driven structure without masking it. No reserve wines enter the blend — single-vintage integrity is non-negotiable across the range.

What no peer does: Coessens produces a true monopole Champagne from a site whose soil profile belongs to Chablis, making the mineral argument here geological fact rather than marketing metaphor.

The NV designation notwithstanding, each release is a single vintage; expect the Fruit and Flower parcels to deliver red-berry density and white-flower lift against a chalk-driven spine, with a drinking window of 3–7 years from disgorgement.
