Champagne Philipponnat Royal Reserve Brut
฿3,700
In 1996, Charles Philipponnat did something no Champagne house had done before: he printed the base vintage year, dosage level, and disgorgement date on every back label — turning a category built on blending mystique into an exercise in radical transparency. That decision is inseparable from the wine itself. Sourced from Grand and Premier Cru chalk-and-limestone slopes in Aÿ, Mareuil-sur-Aÿ, Avenay, and Mutigny at approximately 170 m ASL, the pure chalk subsoil drains aggressively, stressing vines into producing concentrated, mineral-driven fruit with the structural tension that defines the house style. The blend runs approximately 65% Pinot Noir, 30% Chardonnay, 5% Pinot Meunier, fermented in a combination of stainless steel and neutral oak, with partial malolactic fermentation preserving acidity while building texture. Reserve wines (25–34% of the blend) are held in a perpetual solera of used oak casks, refreshed annually under a rule-of-thirds rotation, and the solera itself has been in continuous use since 1946 — meaning every bottle carries a thread of nearly eight decades of harvests. Minimum 36 months on lees at 12°C — more than double the NV legal requirement — builds the brioche depth and creamy mousse that distinguish this from category peers. For an entry-level NV, the solera architecture is structurally closer to a prestige cuvée than to any standard reserve-wine blend.
