Grifi Toscana IGT
฿฿
SaleGrifi anchors Avignonesi's exploration of Tuscan terroir beyond the Vino Nobile appellation. The vineyard sits on the clay-rich slopes surrounding Montepulciano, at moderate elevation where morning fog moderates ripening and preserves acidity—a microclimate that historically favored Sangiovese's mineral precision over overripeness.
The blend combines Sangiovese Grosso with Cabernet Sauvignon, fermented in temperature-controlled stainless steel and aged 18 months in French oak (mix of new and neutral) before 6 months bottle rest. The Cabernet contributes structural tannin and darker fruit density; Sangiovese provides the characteristic red-cherry acidity and earthy backbone. This is not a modern fruit-forward blend—the oak is restrained, allowing clay-mineral salinity to emerge on the mid-palate.
The IGT classification (rather than DOCG) reflects Avignonesi's deliberate choice to exceed Vino Nobile regulations, particularly the Cabernet percentage, prioritizing expression over denomination. Drinking window: 2024–2032.
