Appassimento—the ancient Venetian art of concentrating grape sugars through controlled drying—anchors this expression. Terre Di Rai sources fruit from hillside parcels in Veneto's interior, where slate-dominant soils and moderate continental influence create the mineral backbone essential to dried-grape wines. Grapes are harvested at full ripeness, then dried on straw mats or wooden racks for 3–4 months, a process that concentrates phenolics and reduces water content by 30–40% before fermentation.
Fermentation occurs in temperature-controlled stainless steel, preserving the aromatic intensity that appassimento demands. The wine ages briefly in neutral oak or cement, allowing the dried-fruit character to integrate without oak dominance. The 931 designation reflects the producer's vineyard block classification.
Special feature: Appassimento reds occupy a liminal space—richer than standard dry reds, yet retaining acidity and tannin structure that prevents cloying sweetness. This is not a dessert wine, but a food-driven passito built on savory mineral tension.
