Morey Saint Denis "Tres Girard"
฿฿฿
Domaine Hubert Lignier has farmed the limestone-rich eastern slopes of Morey-Saint-Denis for three generations, where the "Très Girard" vineyard sits at 280–320 metres elevation on clay-limestone soils with pronounced marl content. The site's northeast aspect and shallow topsoil force Pinot Noir roots deep, concentrating mineral extraction over phenolic weight.
The 2019 vintage (typical release) undergoes cold soak for 3–5 days before ambient fermentation in open wooden vats, with 15–18 months aging in French oak (20–30% new). This restrained oak regime preserves the vineyard's signature saline, flinty character rather than masking it. Malolactic fermentation occurs naturally in barrel, softening acidity while retaining freshness.
The "Très Girard" designation marks a village-level bottling that punches above its classification—Lignier's meticulous site selection and low yields (35 hl/ha) yield complexity typically reserved for premier cru expressions. Drink 2024–2035 as the wine's mineral spine and silky tannin structure reward patient cellaring.
