Louis Jadot sources from premier cru and village-level parcels across this appellation, known for producing darker, more structured Pinot Noir than its southern neighbor Gevrey-Chambertin.
Jadot's house style emphasizes traditional Burgundian winemaking: whole-cluster fermentation in open wooden vats, extended maceration to extract tannin and color, and aging in French oak (typically 12–18 months, 25–30% new wood). This restraint preserves the mineral spine of the limestone bedrock rather than masking it with oak.
The wine develops secondary complexity over time—dried cherry, forest floor, and graphite emerge as primary fruit softens. Drinking window: 5–15 years from vintage, though top years can age longer. Vintage variation is pronounced in Burgundy; recent releases show the region's shift toward fresher, lower-alcohol expressions (12.5–13% ABV) compared to the heavier 2009–2015 period.
