When Sylvain Pataille — a trained oenologist who simultaneously consults for roughly 15–20 other Burgundy domaines — founded his estate in 1999, he chose to lease rather than own, staking his reputation entirely on terroir expression over asset accumulation. Le Chapitre sits on the steepest slope in the Marsannay appellation, outside the AOC boundary in Chenôve, on white clay soils dense with iron that give the site its warmth and textural grip — a profile distinct from the limestone-dominant parcels of Clos du Roy or the gravelly En Clémengeots. That iron-rich clay retains heat on a cool slope, accelerating phenolic ripeness while the gradient ensures natural drainage and concentration. In the cellar, Pataille applies his signature whole-cluster infusion approach — long, gentle maceration in stainless steel or fibreglass vats using only indigenous yeast, extracting texture and aromatic complexity without force. The wine ages 15–18 months in barrel at 15–30% new oak, then goes to bottle unfined and unfiltered with sulphur added only at bottling. Le Chapitre carried a 16th–17th-century reputation on par with grand crus — a historical standing that no current Marsannay village wine can claim on paper. The 2021 vintage, shaped by frost and mildew pressure that slashed yields, delivered exactly the kind of cool-climate precision and mineral clarity that suits Pataille's low-intervention style; drink from 2025 through 2033+.
