When Max Schubert's successors needed a Cabernet Sauvignon to carry the same structural ambition as Grange, they built Bin 707 on an uncompromising premise: 100% Cabernet Sauvignon matured in 100% new oak — a specification that places it among the most oak-intensive Cabernet programs in the Southern Hemisphere. The fruit is drawn from Penfolds' multi-regional South Australian network, anchored by Barossa Valley sources including the ancient Kalimna property, where deep alluvial and sandy loam soils — phylloxera-free since the 1880s — yield Cabernet of unusual concentration and structural density. Those ancient, low-vigour soils suppress canopy and extend hang time, driving the tannin architecture that defines 707's cellaring proposition.
Winemaking follows Penfolds' house orthodoxy: acclimatised pure yeast cultures, temperature-controlled fermentation, and the multi-vineyard blending philosophy that prioritises fruit quality over single-terroir declaration — a deliberate inversion of Bordeaux château logic. The new American and/or French oak regime is applied without compromise, building the dense mid-palate richness that separates 707 from every other Australian Cabernet at this tier. The 2021 vintage Snake Edition is a limited-release presentation; no vintage-specific critic scores appear in the brand library for this expression. Bin 707 rewards a decade or more of cellaring.
