Barossa Barossa Valley Shiraz

Nine Stones sources fruit from heritage shiraz plantings across the Barossa Valley floor, where red volcanic loam and slate subsoils define the region's signature dark-fruit character. The vineyard sites sit at 260–320 metres elevation, capturing cool morning air that moderates ripeness while preserving acidity.

Fermentation occurs in temperature-controlled stainless steel, with extended skin contact to extract tannin structure without harsh phenolics. The wine then ages 18 months in a mix of French and American oak—approximately 40% new wood—allowing secondary maturation while maintaining fruit clarity. Malolactic fermentation completes in barrel, softening acidity and adding subtle savory depth.

The expression balances the Barossa's ripe-fruit signature with restraint: low-intervention winemaking prioritizes varietal expression over oak dominance. Drinking window: 2024–2032.
