Cono Sur Silencio Cabernet Sauvignon
฿7,800
Cono Sur was founded in 1993 as a Pinot Noir specialist, yet its Silencio Cabernet Sauvignon represents the house's deliberate push to prove that the same Burgundian discipline applied to its flagship variety translates to Chile's most celebrated Cabernet appellation. Maipo Valley's Andean-facing sites deliver the alluvial gravel-over-clay soils and diurnal temperature swings that concentrate cassis character while preserving structural acidity — conditions that make the valley Chile's canonical address for the variety. Aging runs approximately 17 months in French oak barrels, a duration that exceeds most Chilean Cabernet Reserva programs and aligns Silencio closer to the house's icon-tier 20 Barrels range in ambition. The wine is sealed under natural cork — a deliberate departure from Cono Sur's own 2002 screwcap revolution, signalling that this expression is built for bottle evolution rather than early drinking. What sets Silencio apart within the portfolio is its position as a premium Cabernet Sauvignon from a producer whose entire identity and technical infrastructure was engineered around Pinot Noir — the French oak program, the premium cellar capacity, and the winemaking precision are all borrowed from that tradition and redirected here. The 2017 vintage in Maipo delivered a warm, even growing season with good phenolic ripeness; the wine is approachable now but carries the oak integration and fruit density to develop further over the next several years.
