Founded in 1993 as an independent subsidiary of Concha y Toro, Cono Sur built its reputation on Burgundian Pinot Noir discipline — yet its Colchagua Valley Cabernet Sauvignon draws on the same estate infrastructure anchored by the Santa Elisa home winery in Chimbarongo, where the house manages 1,246 hectares across ten owned estates. Colchagua's continental interior climate — warm days moderated by Andean drainage winds, with alluvial clay and gravel soils retaining just enough moisture to sustain even ripening — drives the variety's characteristic dark-fruit density and firm tannic architecture. Vinification proceeds in temperature-controlled stainless steel tanks (total winery capacity 12 million litres), preserving primary fruit character before the wine moves to French oak barrels for structured aging, consistent with the house's entry-red protocol. The Tocornal tier sits below the 20 Barrels and Reserva lines, making it the broadest-access expression in a portfolio that otherwise dedicates its most technical resources to Pinot Noir — an unusual inversion where the flagship variety is not the one on this label. Colchagua's warm-season consistency delivers a reliably approachable current-vintage expression; drink within 2–3 years of release for peak primary fruit.
