Founded in 1870 and now in its fourth generation under brothers Marcello and Massimiliano Apollonio, this Lecce-based estate has long championed Salento's most obscure indigenous varieties — and Susumaniello, a thin-skinned red grape that nearly vanished from Puglian viticulture, is among its most deliberate bets. The Elfo draws fruit from sandy soils within the Salento IGT zone, a geological departure from the calcareous-clay that defines the estate's red wine corridor; sand drains aggressively, stresses the vine, and concentrates aromatics while naturally limiting colour extraction — a structural reason to vinify Susumaniello as rosato rather than red. Situated at roughly 100 m elevation near Monteroni di Lecce, the vineyards are cooled by simultaneous Adriatic and Ionian sea breezes, preserving acidity in a climate that routinely pushes 14–15% ABV in the estate's reds. Vinification follows a short, temperature-controlled maceration to capture Susumaniello's vivid pigment without extracting the grape's characteristically grippy tannins, with fermentation in stainless steel preserving primary fruit. The special feature here is categorical: while Apollonio ages approximately one million litres per year in French oak — a house-defining commitment — the Elfo deliberately bypasses oak entirely, making it the estate's most texturally transparent expression. Drink young, within 2–3 years of vintage, to capture the grape's fleeting floral lift.
