Baron Philippe de Rothschild launched Mouton Cadet in 1930 as Bordeaux's first branded wine, and the Mathilde BIO expression carries that commercial ambition into certified organic viticulture — a deliberate pivot responding to Bordeaux's growing pressure to reduce synthetic inputs across its vast négociant sourcing network.
Fruit is drawn from certified organic vineyards across the Bordeaux AOC, where the Gironde's temperate, Atlantic-moderated climate — cool maritime winds, moderate rainfall — preserves natural acidity in the grapes. Gravel and clay-limestone soils typical of the Entre-Deux-Mers and Blaye hinterlands contribute freshness and a mineral undercurrent to the blend.
The wine is built primarily on Merlot, supplemented by Cabernet Sauvignon and Cabernet Franc, vinified as a direct-press rosé to achieve its pale salmon hue. Stainless-steel fermentation at controlled low temperatures preserves aromatic lift and fruit clarity without oak intervention. Early bottling retains CO₂ and primary fruit character.
The BIO certification — carrying the EU organic logo — sets this apart from the standard Mouton Cadet Rosé, making it one of the few mass-distributed certified organic Bordeaux rosés at this price point. Drink within 1–2 years of vintage for peak freshness.
