When Charles Rolls and Tim Warrillow founded Fever-Tree in 2004, their founding provocation was blunt: if three-quarters of a drink is the mixer, a commodity product sweetened with artificial additives is a sabotage of the spirit it accompanies. The Premium Elderflower Tonic is a direct expression of that argument. Elderflowers are sourced from England, their delicate aromatic oils preserved through careful extraction and blended with soft spring water from the Elmhurst source in rural Staffordshire — chosen for its low mineral hardness, which allows botanical character to read cleanly without interference. Quinine is drawn from Cinchona Ledgeriana trees on the Rwanda–DRC border, one of the last surviving plantations of the original species, identified through archival research at the British Library tracing quinine provenance back to 1620 — delivering a bitterness that is precise rather than blunt. The formulation contains no artificial sweeteners, no sodium benzoate, and no synthetic aromatics; cane sugar is the sole sweetener. What separates this expression from the standard Indian Tonic is the substitution of citrus-forward quinine aromatics for the softer, honeyed floral register of English elderflower — a profile that opens the door to spirits where citrus would compete rather than complement. Fine, small-bubble carbonation carries the elderflower oils upward rather than dispersing them, making the aromatic delivery unusually persistent for a mixer.
