When Charles Rolls and Tim Warrillow founded Fever-Tree in 2004, their founding argument was blunt: if three-quarters of a G&T is the mixer, a £40 gin deserves better than sodium benzoate and synthetic quinine. The Mediterranean Tonic is where that argument becomes most aromatic — its botanical signature is built around essential oils from lemon thyme sourced in Provence and other coastal Mediterranean herbs, blended with quinine extracted from Cinchona Ledgeriana bark harvested from one of the last original plantations on the Rwanda–Democratic Republic of Congo border, a source the founders identified through archival research at the British Library tracing quinine provenance back to 1620. The water base is drawn from the Elmhurst spring in rural Staffordshire — soft, low-mineral spring water chosen specifically to carry delicate botanical oils without interference. Sweetness comes from cane sugar only; no artificial sweeteners, no sodium benzoate. Carbonation is deliberately fine-bubbled and high-pressure, a textural decision designed to lift herbal aromatics rather than overwhelm them. What separates this expression from the flagship Indian Tonic is the shift from citrus-forward bitterness to a drier, herb-driven profile — the Provençal lemon thyme introduces a floral, almost savory register that opens up botanical gins, dry vermouths, and low-intervention spirits in ways a standard tonic cannot.
