Kavalan Lan Single Malt Whisky (700 ml)

On Burns Night 2010, a Kavalan expression was poured blind in Leith, Scotland, and beat three Scotch whiskies outright — the moment that forced the whisky world to abandon the assumption that cold, slow climates hold a monopoly on great single malt. That result was built on a deliberate geographic gamble: T.T. Lee sited Yuan Shan Distillery at the intersection of cold air descending from the Xueshan (Snow Mountain) Range and humid Pacific Ocean breezes in Yilan County, northeastern Taiwan.

Warehouse upper floors reach 42°C in summer with no air-conditioning, driving wood extraction at a rate that makes four to six years in Taiwan broadly equivalent to 15–25 years in Scotland. Water is drawn from Snow Mountain springs, filtered through gravel and sand, and contributes the signature creamy texture that anchors the house style.

Production begins with unpeated malted barley imported from Scotland and Finland, mashed over eight hours, then fermented across a three-stage cycle — approximately 60–72 hours total — using a dedicated 'fruit producer' yeast strain to maximise ester development. Double distillation runs through Forsyths copper pot stills; the spirit cut was deliberately narrowed from 78–72% down to 65–55% ABV to increase complexity. Maturation draws on a portfolio of ex-bourbon, ex-sherry, ex-port, and proprietary S.T.R. (Shaved, Toasted, Re-charred) casks — a technique Kavalan pioneered with the late Dr. Jim Swan, now adopted globally.

The Lan expression blends multiple cask types into a core-range bottling that distils the full tropical-and-cream house character without the single-cask extremity of the Solist range — the entry point that won Distiller of the Year at the 2026 World Whiskies Awards.
