Kavalan Solist Port Single Cask Strength Single Malt Whiskey (700 ml)

In January 2010, a Kavalan expression defeated three Scotch whiskies in a blind tasting held in Leith on Burns Night — the moment that forced the whisky world to reckon with what subtropical heat can do to oak. That heat is the central fact of the Solist Port: Yuan Shan Distillery sits at the intersection of cold air descending from the Xueshan (Snow Mountain) Range and humid Pacific Ocean breezes, with upper-floor warehouse temperatures reaching 42°C in summer. Wood extraction that would take 15–25 years in Scotland is compressed into roughly 4–6 years, driving the port cask's tannin and dried-fruit character deep into the spirit at a pace no cooler climate can replicate.

The new-make itself is built for this: double-distilled in Forsyths copper pot stills (12,000-litre wash / 7,000-litre spirit) with a narrowed spirit cut of 65–55% ABV to maximise ester complexity, preceded by a three-stage fermentation — including a dedicated 'fruit producer' yeast round — totalling 60–72 hours. Water throughout is sourced from Snow Mountain springs, filtered through gravel and sand. The result is then filled into ex-port Portuguese barriques for single-cask maturation at natural strength.

What separates this expression from the Solist range's sherry variants is the port cask's contribution: dried fig, dark plum, and cocoa layered over the distillery's signature mango-and-cream tropical base — a combination no European port-finished malt can produce, because no European distillery operates in 42°C warehouses. Bottled at natural cask strength (typically 50–59.9% ABV), non-chill-filtered, single barrel — every bottle carries individual cask fill and dump dates.
