In 1968, while the rest of the Scotch industry was diluting everything to 40%, the Grant family at Ballindalloch made a deliberate commercial decision to bottle at full cask strength — releasing what is widely regarded as the first regularly available cask-strength single malt, fixed at 60% ABV (105 old British proof), a number that has never changed across more than five decades of continuous production. That stubbornness is structural, not cosmetic.

The distillery sits at the north-western foot of Ben Rinnes at roughly 244 metres elevation, drawing process water from the mountain's own springs — soft, lightly mineral water that supports a clean, heavy-bodied fermentation. Unpeated Moray-grown barley is fermented for an average of around 106 hours in closed stainless-steel washbacks, building ester complexity before distillation in direct gas-fired copper pot stills — the largest in Speyside — a method briefly abandoned for steam coils in the early 1980s and reversed within weeks when the spirit lost its characteristic oily depth. The Maillard-reaction caramelisation from direct firing is the backbone that survives long sherry maturation.

The 105 is a multi-cask vatting of ex-Spanish Oloroso sherry butts sourced exclusively from José Miguel Martín, matured in traditional earth-floored dunnage warehouses on site, bottled at natural colour with no chill-filtration and no caramel addition. What distinguishes it categorically from peers: it is not a single-vintage or single-cask release but a consistent, repeatable cask-strength house style — the only expression of its kind in the core range of any major independent Speyside distillery.
