Wolfburn was silent for over 150 years before Aurora Brewing Ltd. relit the stills on Burns Night, 25 January 2013 — a deliberate symbolic choice that anchored the revival to Scottish cultural identity while committing to a production philosophy with almost no modern parallel. Henderson Park, Thurso, Caithness sits closer to the Arctic Circle than to Edinburgh, and process water drawn from the Wolf Burn — a spring-fed stream filtered through ancient Caithness flagstone — arrives at the stills crystal-clear and cold, contributing to the distillery's characteristically clean, fruit-forward new make. The coastal proximity imparts a mild maritime salinity during maturation in traditional dunnage warehouses (clay floors, maximum three casks stacked). This expression draws from both ex-Oloroso Sherry hogsheads/butts and ex-Bourbon American oak casks, the interplay of dried-fruit density and vanilla-driven sweetness shaped by the reflux bowl on the spirit still — a design choice by Forsyths of Rothes that deliberately lightens the distillate, preventing wood from overwhelming the house's fruity, biscuity core. Bottled at natural cask strength, non-chill filtered, with no artificial colouring — all carried out on-site at Wolfburn's own bottling facility, one of the only Scottish distilleries to complete the entire grain-to-glass process without leaving the property. The zero-automation mandate (the sole computer governs mash tun temperatures) means every cask selection and vatting decision is a human one.
