When Shinjirō Torii broke ground at the misty foot of Mount Tennōzan in 1923, he chose a site that tea master Sen no Rikyū had already declared sacred for its water — soft aquifer water fed by the confluence of the Katsura, Uji, and Kizu rivers, drawn at roughly 25 metres elevation in one of Japan's most humid microclimates. That warmth and moisture accelerate maturation in ways no highland distillery can replicate.

Yamazaki's Tsukuriwake philosophy drives the 18-year-old's complexity: fermentation runs 64–80 hours across both Oregon pine wooden washbacks and stainless-steel tanks using multiple yeast strains, while distillation cycles through pot stills of deliberately varied shapes — squat, tall, ball-necked — with both worm-tub and shell-and-tube condensers to generate a wide palette of malt styles from a single site. At 18 years, the cask regime shifts meaningfully toward Japanese Mizunara oak (Quercus mongolica), alongside ex-bourbon American white oak and Oloroso sherry casks — a proportion that distinguishes it sharply from the 12-year expression.

Mizunara is the category transgression: so porous it is nearly impossible to cooperate, used almost nowhere else in world whisky, yet it alone delivers the sandalwood, kyara incense, and agarwood character that defines Yamazaki's upper tier. Bottled at 43% ABV with chill-filtration in the standard release, the 18-year-old sits at the threshold where Mizunara influence becomes unmistakable rather than merely present.
