John Jameson's decision to include unmalted barley alongside malted barley in his pot still mash was originally a workaround for 18th-century Irish malt taxes — yet that fiscal pragmatism became the defining signature of Single Pot Still Irish Whiskey, a style that exists nowhere else on earth. Production has operated from New Midleton Distillery, County Cork since 1975, drawing water from the Dungourney River and barley from over 200 farms within 50 miles of the site. Crucially, barley is dried in a closed gas-fired kiln — not peat — preserving a clean, unsmoked malt character that separates Jameson categorically from most Scotch blends. The house style marries Single Pot Still whiskey (malted and unmalted barley, triple-distilled in copper pot stills) with maize-based grain whiskey (triple-distilled in column stills), matured a minimum of 4 years in a combination of ex-bourbon American oak and ex-sherry European oak butts. The special feature here is structural: unlike virtually every other major blended whiskey house, Jameson sources all component whiskeys from a single distillery — Midleton — giving the blending team grain-to-glass control over consistency that multi-source blends cannot replicate. The result is a whiskey whose approachability is an engineered outcome, not an accident.
