When founding Master Distiller Francisco Alcaraz selected Atotonilco El Alto in Jalisco's Los Altos highlands as the site for Hacienda Patrón, the decision was driven by two non-negotiable criteria: a contaminant-free water supply and a highland microclimate that coaxes Blue Weber Agave toward sweeter, fruitier sugar profiles than lowland cultivation ever yields. That agronomic advantage is the foundation on which El Alto is built.
The piñas are hand-chopped and slow-baked in small clay brick ovens for exactly 79 hours using alternating steam and rest cycles, then crushed by two parallel methods: a two-ton volcanic tahona wheel and a modern roller mill — the distillates fermented separately in open pinewood tanks for a minimum of 72 hours before blending. Both streams are double-distilled in small-batch copper pot stills designed by Alcaraz, which strip sulfur and preserve aromatic complexity impossible in column-still production.
El Alto is aged more than three years in a combination of new and used American, French, and Hungarian oak casks — the Hungarian cooperage being the differentiator absent from every other expression in the Patrón range. Each bottle is hand-numbered, hand-corked, and hand-sealed, passing through approximately 60 hands before release. The highland terroir's inherent fruit sweetness, amplified by extended oak contact across three cooperage traditions, produces a textural extra añejo that retains the tahona's earthy agave signature rather than surrendering it to wood.
