Alexandre Gabriel's double-ageing method — reviving the 17th-century practice of Caribbean rums finishing in European port cellars — finds one of its most transparent expressions in this single-vintage 2013 Barbados. Distilled at Stade's West Indies Rum Distillery (WIRD), Blackrock, St. Michael, a coastal seafront site built on coral-limestone geology with direct Atlantic exposure: the warehouse sits metres from the ocean, and that maritime air permeates the ageing staves.
Stage one sees the molasses-based distillate mature tropically in American white oak ex-bourbon barrels at WIRD, where the tropical angel's share runs 6–7% annually — concentrating the spirit at roughly three times the rate of a Cognac cellar. Stage two transfers the rum to Château de Bonbonnet, Ars, Charentes, where ex-Ferrand French oak Cognac casks impart dried-fruit structure and baking-spice tannin unavailable from American oak alone. The house's Cognac-style dosage — toasted brown sugar blended with rum and aged one year in Ferrand Cognac barrels — is applied as a flavour enhancer, not a sweetener, and openly disclosed.
What separates this expression from Plantation's blended range is the single-vintage, single-island discipline: every drop traces to one distillation year at one coral-limestone seafront site, making the maritime WIRD character — saline, waxy, subtly oxidative — the unambiguous centre of the glass.
