Francisco Alfredo Pellas Canessa planted the first canes at Ingenio San Antonio in 1890, and five generations later the Pellas family still seals every barrel with local plantain leaves before locking them into non-climate-controlled warehouses — a deliberate refusal of artificial temperature management that defines the entire Flor de Caña philosophy. The distillery sits roughly 8 km from San Cristóbal, Nicaragua's tallest active volcano at 1,745 m; continuous volcanic ash fall enriches the 35,000-acre estate's soil, while mineral-laden underground water — filtered through Pacific Ring of Fire geology — feeds fermentation. That same volcanic heat drives accelerated wood extraction without any artificial accelerant. Molasses from the estate's own mill is fermented with a proprietary in-house yeast strain for approximately 36 hours, then distilled through a five-column continuous still to ~96% ABV — a deliberately neutral spirit that places the entire flavour burden on oak. The distillate enters re-charred ex-bourbon American white oak barrels at 77% ABV, then ages under purely tropical ambient conditions for 30 years. What makes this expression categorically unusual: unlike virtually every Spanish-style rum at this age tier, it carries zero added sugar, caramel, or colouring — the amber depth and vanilla-toasted oak character are entirely the product of barrel and climate. The result is a notably dry, non-viscous profile rare at three decades of tropical aging.
