The Bitter Truth was founded in Munich in 2006 by bartenders Alexander Hauck and Stephan Berg, who revived the 19th-century apothecary tradition of aromatic bitters at a time when the category had nearly vanished from European back bars. Their Grapefruit Bitter draws directly on that pharmacopoeia lineage, positioning dried grapefruit peel as the dominant botanical rather than a supporting accent.
Produced in Bavaria, the liquid is built on a neutral grain spirit base into which dried grapefruit peel and complementary botanicals are cold-macerated — a method that preserves volatile citrus oils and the sharp, pithy bitterness that heat-based extraction would blunt. The result sits at a cocktail-functional 39% ABV, high enough to carry aromatic intensity without the dilution penalty of lower-proof bitters.
What separates this expression from generic citrus bitters is its single-fruit focus: grapefruit's naringin-driven bitterness is not softened by orange or lemon co-macerates, making it one of the few bitters in its class where the bitter compound, not sweetness, leads. The 200 ml format delivers a measured dose-per-bottle suited to high-volume cocktail use.
