Carlo Pellegrino's Bato Amaro Siciliano originates from Marsala, Sicily's fortified-wine heartland on the western coast, where limestone soils and Mediterranean sun have shaped spirit-making for centuries. The house, established in 1880, built its reputation on Marsala but extended into amari using the island's botanical tradition.
Bato is constructed from neutral spirit infused with a proprietary blend of Sicilian herbs, citrus peel, and roots, bottled at 30% ABV. The exact maceration duration and botanical roster remain house secrets, but the profile suggests extended steeping of bitter orange peel, gentian, and local wild herbs characteristic of Sicilian digestivi. No oak aging is employed; the spirit remains clear and herbally direct.
The amaro sits in the medium-bitterness register—less austere than Fernet-Branca, more assertive than Luxardo Amaro.
