Mancino Vermouth Chinato originates from Turin, Piedmont's vermouth heartland, where the Mancino house has produced fortified wines since 1786. The vermouth base draws from neutral white wine sourced across northern Italy, fortified to approximately 18% ABV and infused with a proprietary blend of alpine botanicals—gentian, wormwood, and cinchona bark dominate the formula, characteristic of the chinato category.
The production follows traditional maceration: dried botanicals steep in the fortified wine base for an extended period, allowing full extraction of bitter and aromatic compounds. Cinchona bark, the defining ingredient, imparts quinine-like bitterness and a distinctive mineral edge. The final expression is neither filtered nor chill-treated, preserving the full botanical complexity. Bottled at 500 ml, this is the classic aperitivo format.
Chinato represents a transgression within vermouth—less sweet than its dry or sweet cousins, more aggressively bitter and herbal. It functions as a standalone aperitivo or modifier in classic cocktails (Negroni variations, Americano). The 500 ml format suggests regular use rather than collection.
