Founded in 1868 when seventh-generation head Sojuro consolidated the Kitaoka family's four-century Yoshino trading roots into sake brewing alone, Kitaoka Honten has since extended its botanical instincts — honed through sakura-blossom yeast isolation and flower-infused liqueurs — into a range of fruit cocktail bases designed for professional bar use. The brewery sits at the entrance to Yoshino-Kumano National Park in southern Nara, drawing water from Oku-Yoshino mountain streams characterised by low iron content and a soft mineral profile; that same water philosophy — gentle, non-assertive — informs the liqueur production. This Red Grapefruit Sour base is produced via botanical infusion method, steeping fruit-derived material in alcohol with sugar syrup, a technique the house applies across its liqueur range. The 1.8 L izakaya-format bottle is the category transgression here: where most premium Japanese fruit liqueurs are packaged for retail gifting at 500–720 mL, this format is engineered explicitly for back-bar volume, making it unusual among craft producers at this price tier. Bitterness is present but calibrated — red grapefruit's pith character is preserved rather than smoothed away — sitting against a medium-sweet sugar base that leaves room for dilution in a sour build.
