The town's canal-side distilleries built their reputation on precise control of malt fermentation and copper-pot distillation — a discipline that shaped Bobby's house style.
This expression follows the jenever classification: a base of distilled grain spirit (primarily malted barley and rye) infused with juniper and traditional botanicals. Unlike London Dry gin's aggressive juniper foregrounding, jenever privileges the malty, slightly sweet undertone of the grain spirit itself, with juniper and spice playing supporting roles. The botanical profile leans toward anise, coriander seed, and orris root — classic Schiedam markers — rather than citrus-forward contemporary botanicals.
The special character of Bobby's lies in its restraint: juniper appears as a dry, resinous frame rather than dominance, allowing the grain's subtle sweetness and the spice botanicals' warmth to emerge on the palate.
