When Pierre Vaudon's predecessors began distilling at Le Maine Verret in Verrières around 1870, they retained a practice that most of the Cognac trade would quietly drop: distillation sur lies, running the fermented Ugni Blanc must through the Charentaise alembic with its lees still present. That decision — preserved unbroken across five generations — is the technical signature that separates this house from virtually every major négociant today. The 28 estate hectares in Verrières and Ambleville sit on Campanian chalk, the same deep, porous geology that gives Grande Champagne its reputation for slow aromatic development and structural longevity; inter-row wild meadow cover induces vine stress that concentrates the must before it ever reaches the still. Fermentation uses selected yeast strains chosen vintage by vintage according to climatic conditions; double distillation proceeds slowly in two traditional copper pot stills, with the heart cut made by nose rather than instrument. Initial aging runs approximately three years in virgin Limousin oak, drawing from forests including Bercée, Gâvre, and Reno Valdieu, before transfer to refill Cognac casks — the combination of damp and dry cellars used deliberately to modulate aromatic pace. What is unusual here is the lees-on distillation at commercial scale: the fatty acids and esters retained from the lies add a textural density and spice register that clean-distilled Grande Champagne simply cannot replicate. The Terres expression drinks with the spice-forward, slow-building character the house is known for, and the chalky subsoil ensures the acidity to carry it through a long finish.
