Roger Groult has distilled Calvados on the family estate in Saint-Cyr-du-Ronceray since 1893, making it one of the oldest continuously operating Pays d'Auge houses — a lineage that informs a strict insistence on double distillation in copper pot stills, the method legally required in Pays d'Auge and the one that strips less aromatic complexity than column distillation used elsewhere in Normandy.
The orchards sit in the clay-and-limestone bocage of the Pays d'Auge, where the heavy, moisture-retentive soils slow ripening and push apple varieties toward higher acidity and tighter fruit concentration — the raw material that survives long oak aging without losing definition. The blend draws on both bitter and bittersweet cider apple varieties, fermented to dry cider before distillation.
After distillation, the spirit matures for a minimum of 8 years in Limousin oak casks, a longer rest than the category's 2-year legal minimum, during which the wood contributes vanilla and dried-fruit oxidative character while the apple core remains legible. The 8-year statement is an age guarantee, not a blend average — every component has served the full term.
Bottled at 41% ABV, this expression sits at the threshold where orchard fruit and oak integration are fully resolved but before the spirit tips into the dried-fruit dominance of older reserves.
