Jean-Baptiste Camus founded the house in 1863, and five generations later Cyril Camus made a deliberate structural bet: acquire the largest single-producer vineyard block in the Borderies cru — 188 hectares centred on Château du Plessis — and bottle it without blending in other crus, a move that directly contradicts the multi-cru blending orthodoxy of the Cognac establishment.

Borderies is the smallest of Cognac's six growing areas, its clay-limestone soils dense with silex (flint) that drives the cru's signature violet florality and unusual textural roundness — qualities that distinguish it sharply from the drier, more austere Grande Champagne style favoured by multinational-owned peers.

Ugni Blanc grapes are pressed within two hours of harvest, fermented on temperature-controlled tanks for approximately six days, then distilled sur lies in copper Charentais alembic pot stills to build ester complexity and body. During the second distillation (bonne chauffe), Camus's patented 'Intensty' method draws twenty one-litre samples from the heads fraction, identifies the single litre with the highest ester concentration, and reintegrates it into the hearts — a process applied across all expressions since 2003. Aging proceeds in 350 L previously used Limousin oak casks with very light toast, a deliberate choice to keep delicate floral aromatics from being overwhelmed by wood.

The Special Dry expression is the only commercially available 100% single-estate Borderies Cognac in a 500 ml format, making it the most direct terroir document the house produces at accessible scale. As an NV blend, it is built for consistency of house character rather than vintage variation, and is drinking well now.
